A true tree to glass experience

 We are an apiaries, cider mill, and orchard-based cidery located minutes away from Letchworth State Park in Western New York. As third generation beekeepers, our bees rehab local orchards in the region. Bees play a crucial role in apple orchards, serving as vital pollinators for the delicate apple blossoms. As they buzz from flower to flower collecting nectar and pollen, bees facilitate the process of fertilization, ultimately leading to the formation of apples. The intricate dance between bees and apple trees results in bountiful harvests of crisp, flavorful fruits. Orchards like ours that welcome bees by providing diverse flora and minimizing pesticide use benefit not only from increased fruit yields but also contribute to the overall health of bee populations.
The apples produced are then pressed, blended and aged on-site at our cider mill and tasting room located in Castile, NY.  We create our ciders using only 100% juice extracted from fresh pressed apples with no added water,  artificial additives, colors, or flavorings in our hard ciders in order to capture the uniqueness of the different blends of apples. We then use a special aging process that is tailored to each blend of ciders, making our ciders truly handcrafted  and a genuine tree to glass experience!

Dear friends, 
We hope that you and your families are doing well and staying safe this year. As we look to the orchard and see a bounty of apples growing on the trees, we observe nature’s way of signaling the start of a new cider season. A start that provides joy and a sense of hope in what this year’s apples may ultimately become. A new season that honors the past while embracing the future. With that, we have some exciting news that we’d like to share.
Coming later this year, we’d like to introduce you to “Three Falls Cider,” our endeavor into the hard apple cider world that has been years in the making. Renovations at the Castile Cider Mill will include a conversion of the back area into an intimate tasting room along with a planned walk out deck space overlooking Wolf Creek to follow.
We planted an old world style hard cider apple orchard over three years ago to be pressed and fermented on site to bring you a traditional hard cider. It is our goal to continuously develop and craft fresh and crisp ciders that can be sipped and enjoyed while taking in the beauty and all that the Genesee River Falls and Letchworth State Park can offer. We look forward to seeing you this September at the Castile Cider Mill and later on in the season at Three Falls Cidery. You’ve enjoyed our sweet cider over the years, now we hope you’ll soon enjoy our hard ciders as well.
